Tripe cooked in a traditional Marchigian tomato sauce with vegetables.

Ingredients

- Beef tripe
- Onion, celery, carrot
- Tomato passata
- Olive oil
- Parmesan
- Salt and pepper

Preparation

Boil tripe and cut into strips. Sauté vegetables, add tomato, then tripe. Simmer until well blended. Serve hot with grated cheese.
