Lamb Offal with Eggs (Coratella d’Agnello con le Uova)

A traditional Easter recipe using lamb offal enriched with beaten eggs.

Ingredients

- Lamb offal (heart, liver, lungs)
- Onion
- Olive oil
- White wine
- Eggs
- Salt and pepper

Preparation

Chop the offal into small pieces and brown with onion and oil. Deglaze with wine and cook until reduced. Beat the eggs with salt and pepper, then pour into the pan and stir until just set.
