A variation of grass pea soup that may include cotechino (pork sausage) for added flavor.

Ingredients

- Grass peas (cicerchia)
- Onion, carrot, celery
- Cotechino (optional)
- Olive oil
- Salt and pepper

Preparation

Soak and cook the grass peas. Sauté the vegetables and add to the legumes. If using cotechino, slice and add during the final stage of cooking. Serve hot.
