Potato, Green Bean and Corn Soup from Astorara (Zuppa di Patate, Fagiolini e Granoturco di Astorara)

A soup native to Montegallo in the Sibillini Mountains, made with seasonal vegetables.

- Potatoes
- Green beans
- Fresh corn kernels
- Onion
- Olive oil
- Salt

Sauté chopped onion, add cubed potatoes, green beans, and corn. Cover with water and cook until tender. Serve warm, drizzled with olive oil.
