Frecantò

A summer vegetable stew made with fresh garden produce, ideal as a side dish or light main.

- Eggplants
- Peppers
- Zucchini
- Tomatoes
- Onion
- Olive oil
- Basil
- Salt

Chop all vegetables into chunks. Sauté onion in oil, then add the remaining vegetables. Cook uncovered, stirring occasionally, until everything is soft and well blended. Add fresh basil at the end.
