Spelt Soup (Minestra di Farro)

A rustic and filling soup made with spelt and seasonal vegetables.

Ingredients

- Spelt
- Onion, carrot, celery
- Garlic
- Olive oil
- Tomatoes (optional)
- Salt and pepper

Preparation

Soak spelt overnight. Sauté vegetables in oil, add spelt and water or broth. Simmer until spelt is tender. Add tomatoes if desired and serve warm.
