Polenta with Sea Snails (Polenta alle Concole)

A coastal dish where creamy polenta is served with a tomato-based sea snail sauce.

Ingredients

- Cornmeal
- Sea snails (concole)
- Tomato passata
- Garlic
- Olive oil
- Parsley
- Salt and pepper

Preparation

Cook polenta until creamy. Separately, sauté garlic in oil, add snails and tomato, simmer with parsley. Serve sauce over hot polenta.
