Stuffed Ascolana Olives

One of the most iconic dishes of the Marche region, featuring large green olives stuffed with meat and fried.

Ingredients

- Large green olives (Ascolana)
- Ground meat (beef, pork, chicken)
- Onion, carrot, celery
- Eggs
- Breadcrumbs
- Flour
- White wine
- Nutmeg
- Oil for frying

Preparation

Pit the olives. Sauté the chopped vegetables, add the meats, and brown. Deglaze with wine and cook through. Blend into a paste and season. Stuff the olives, then bread by passing them in flour, beaten egg, and breadcrumbs. Fry until golden.
