Fish Stew from Fano (Brodetto alla Fanese)

A traditional fish stew from the town of Fano, made with various types of seafood and vinegar.

Ingredients

- Mixed seafood (cuttlefish, sole, red mullet, etc.)
- Onion, garlic
- Vinegar
- Tomato sauce
- Olive oil
- Salt and pepper

Preparation

Sauté onion and garlic, deglaze with vinegar, add tomato and seafood in stages based on cooking time. Simmer until the sauce thickens and seafood is tender. Serve hot with bread.
